They provide me with wonderful steaks, briskets, ribs, fajitas, burgers, charcuterie, milk, cheese, boots, belts, bags.... If we discontinued using bovine for food and leather, among other things, they would likely go virtually extinct - they aren't particularly amusing for zoos, likely wouldn't do well in the wild, and with no commercial value, people would see no need to keep any great herds around.

Cows are producing a heck-of-a-lot of methane, which is pretty not great for the whole climate change thing. I'm not sure I really see that changing though; beef is pretty widely eaten (and you know fair enough it's pretty good).

Cows are a connection between plant based nutrition and animal-centric nutrition, it utilizes what humans can't digest and then humans feed on so.
Ancient people had much more uses to it than for its milk and meat though, like in agriculture and proto-industrialization, fields which other cattle fails at.
Another of their uses was for example its methane-rich manure as an alternative to firewood (I've heard it lasts much longer).
