1 easy "plot point" for devs
2 taboos are more "naughty"

For me, incest and some other stuff as well is a turn-on primarily because of the taboo nature of it.

An incest story is more likely for the characters to put in some type of effort to attract their love interest, while writers of non incest stories tend to put in less effort and itsjust "pleased to meet you, lets have sex"

Compared to todays "known" brother-sister relationships: I think the taboo stops a lot of what would be healthy and loving relationships.
Without any taboo connected, it's just too convenient that many younger sisters look up to and adore their older brothers - This would be pretty common if not shunned by society like it is today I think.

Knowing each other well, have generally the same mindset and opinions, etc.
