I can't believe the proportion of games on here that center on incest. Even on mainstream sites like pornhub. I'm not shaming anyone, but why is it so popular? Is it mainly for the thrill of something illicit? Or do so many people legitimately want to have sex with a family member?

(to answer your question, its because of the love connection between legit family members in a, for lack of a better word, "normal" household.
Mother loves her kids and want them to learn and grow, what better way to learn than from your Mother
Fathers want their kids to know what true love means (ill love you like your mother)
Sister loves her brother as a protector and will give herself to him in return. (not really but still)
Most men will lust over their mother/aunts or sisters first due to hormones growing up and being close to them everyday
Most women will say their father was their first love..be it forbidden love, or just "first male" love.
Its not necessarily a taboo, its just mainstreamed to be seen as taboo, in reality if two consenting adults consent to the act, everyone else has no say in what happens.)

Many men will end up with a woman that, in at least a few ways (hair color, eye color, basic build, tit size), resemble what their moms looked like when they were young.

Several reasons, I assume:
a) As many have stated, "taboo" sells, and mostly in an area which is itself "taboo" for many.
b) It solves the initial stumbling block of Adult Games: how do people meet? how do they start a relationship? -> with incest this is built-in
c) It may allow for "power dynamics exploration" particularly in age difference incest
d) For most of us, our family is both our strongest bond and the source of many of our formative experiences, and it would be very hard not to have this involved with the our strongest pulsion - that of procreating. In fact, this is so much so that most human societies have created the strongest taboos specifically for this case (partially justified due to the detrimental genetic effects of inbreeding in small groups, which the taboo tries to prevent) otherwise it would be very hard to have the advantages of exogamous mating.

Agree it's probably the taboo thing. I don't think most players actually have feelings like that for real family, but the illictness of the idea gives it a powerful appeal.
Part of why I wish so many devs didn't shy away from that angle by either having the family members barely care about the taboo or having other people who find out not care.
