Tend to wait for WT modders if the game has enough stats/decisions that they have any reason to exist, else I'll mostly play ASAP.
Some few devs are making their updates so short that is worthwhile to simply skip a few updates though, but that's rare for me.
I'll wait in 99,99% cases. Most games are not worth the full price tag, especially the games from big publishers that are increasing the prices even more. Also now days most games are published with fixing still needed.
Personally I've never been into MMO or competitive multiplayer games so I've never had an issue with FOM, that combined with the giant pile of games I've only half finished and only occasionally get around to playing I usually wait nearly a year from a games release before playing that way most if not all the DLC will be out and most of the bugs should be dealt with by then.
For regular games, I'll often forget about them for several years before even remembering to buy them. Then I'll forget for a while longer before playing them.
For AVNs, I'll often download them on release, but may not play it for days to months depending on how busy I am at the time. Especially for new to me games that I'm putting into my backlog, I might wait years before getting around to them. For updates, it could be anywhere from same day to a week, just depending on how interested I am.
I generally wait. When I was younger, till mid 20s, I used to buy the games first day. I used to have more free time and the hobby was cheaper, plus I had no expenses.
Nowadays everything has changed. Videogames are far more expensive, I have less free time between the job and family, and expenses are up, especially these last few years because Covid-19 and Ukraine-Russia war.
That's why, unless it's a particularly relevant game, like GTA VI for example, I like to wait. This has its positive points since many times I find the game discounted and by the time I play, many launch bugs are already fixed. Although it has the big disadvantage that I have to avoid spoilers. Internet is a very dangerous place.
usually later as guy who bought games on hype a few times and preorder and has yet to touch the vast majority of my steam backlogged I now usually prefer later to get best price deals on games
