Had some mushrooms in the fridge I needed to cook before they went bad, so sauteed them in a variety of my favorite mushroom herbs (thyme, oregano, sage, parsley, a bit of garlic) and set them aside. About to go make a quesadilla with some of them.
I mostly make fast dishes like burgers, fish and pasta. Every time I try something complicated, I burn it and make fun of myself by saying "well, at least it was a fast way to burn off some calories" and then go back to tv dinners for a bit.

I have made them a couple of times and the spice mix is amazing with ground chicken thighs (turkey is too expensive where I live, while chicken breasts have no fat to activate the spices). They are really convenient for meal prepping and, easy to consume while on the go (provided you can heat them up). Also very high protein and with veggies, if you care about nutritional value. There is still room of improvement concerning the tortillas: every brand I find is either undercooked or tears and crumbles, when I try to roll them.
Latest creation was vegan lasagna with a different recipe than I've used in the past. Did not turn out well, just about edible, but certainly not good.
