I hate Sysco with a deep and abiding passion. The way their business is put together makes billing a nightmare and keeping consistent quality nationwide nearly impossible. We had to go back to them many times for refunds when they continually provided the wrong items over and again, or charged a price different from the price in our contracts. But, when you're the 8,000lb gorilla, you really don't give a fuck.The spicy Andouille is the best. The soft chorizo, cooked up like ground sausage is good, too. That's what I used to use in cast iron pan deep dish pizzas (with pepperoni).
Suppliers like Sysco get their product at the same places that most supermarkets do. But, they get a better price for bulk orders. A different place I worked at would get all our sliced beef from a local butcher, because the quality jumped about 5X, we paid double for meat and about 1.5X for cheese and veggies. But, all our bread, sauces and secondary ingredients came from Sysco. But, our ground beef came from Sysco, the cost was really close, but Sysco was leaner and could be ordered in larger packages (10 lb vs 1 lb).
I know its rare for a small price increase make a big difference. But, convenience sometimes is a factor.
It was a big store brand. I thought it was weird how we made our own dough, chopped fresh peppers, onions, tomatoes and mushrooms, but bought an industrial sized bucket of sauce.
I think it has something to do with the casing and density of the sausage. The last good pepperoni I got was Boars Head and it curled in a pizza oven.
The crispy edges withe the soft cup area is delicious.
We moved our business to PFG eventually. You don't pick from their list (like Sysco), but curate your own list and that's all they'll ever purchase, store and deliver. Was cheaper overall and much more consistent. They were also good about keeping us informed if they found that something on our list was becoming a problem and would help us find a good substitute if necessary.
