Adding tags seems like a good thing to me until we start getting problems with inconsistent tagging and tags not actually representing the games with that subject

Yeah, I think the general incest tag should remain. Tgere should just be separate tags for different family members. Just like "daughter", "brother", "father" etc. Like sure, there could be some misses. You could saerch for "father","daughter" and get a mother/daughter father/son pairing, but I think those would be few and far between, especially compared to a generalizex incest tag

In general it would be a great idea. But, as everything else, it needs to be rolled in gradually. Trying to recreate VNDB's tags all at once is overwhelming, difficult to adopt by the uploaders and may not be necessary for the amount of games currently available. Instead I would propose the following:
Phase 1) Keep "incest" as tag in all games that feature it. Add the most popular ones: "brother-sister", "mother-son", "father-daughter", "cousins", "aunt-nephew" ("uncle-niece" is not very frequent). Anything else falls under a generic "incest" tag.
Phase 2) For the next 1-2 years, check if the changes above improved the site or made a mess of things. It is quite easy to roll them back: remove the specific tags and keep "incest".
Phase 3) If there is demand for more specific tags and the time/effort to spend, then add more pairings like "uncle-niece", etc. Also add tags for step-cest: "non-blood-related-bother-sister", "non-blood-related-mother-son", etc. The old tags could be renamed to "blood-related-brother-sister", etc or left as they are.

Specifying if the MC is the son, brother, father, sister, mother, etc. in these tags adds a new dimension of complications. It is also not very useful, since there are "male protagonist" and "female protagonist" tags.

The main problem would be when it gets to pairings. Check incestflix, and see how many tags are for each combination of incest genres lol

That site has made some very weird decisions regarding to its tags. They tried to be exhaustive with the incest tags, which after all is the focus of the site, so they ended up with too many useless tags. E.g. there is no way in hell that "Father, mother and four daughters" is needed frequently enough to be a tag. Yet, there is no "anal" tag.... Meanwhile their "step-whatever" tags are not used correctly, because it is too much work for porn videos, whereas step-family relationships are not as prevalent in games. Also there is no way to even suggest a tag over there, so the uploader/admin has to do all the work himself.

Fortunately these problems can be easily avoided by introducing only "mom-son", "father-daughter" and "brother-sister" tags, which cover 90-95% of the adult games hosted here. As I said before, I would also add "cousins" and "aunt-nephew", but not if I wanted to keep the tags to a minimum. If more tags are needed in the future, then the topic should be revisited then.

You can't have tags for every variant of every fetish. You just search for your tag, then read the intro to see which variants are in the VN. Pretty simple.

Even if may be a good idea, most of the times it comes the full pack and may end adding a lot of tags to the incest games. The existence of a relation doesn't make always mandatory, son-daughter it use to be an optional path, so it complicates further the tagging. At the end, I think it's something that should be added in the description of the game rather than the tag system.

Would i use that for my searches if it was a thing? sure. Do i think its needed? no, probably not. Seems like some people in this thread didn't realize there already is a DILF, MILF, GILF tag out there which may just need some more attention for use. I think at the moment anyway the majority of incest games that are coming out are trying to go down the full checklist of tabboo relations in one game so man would that get heavy on the tags if you had one for each relationship.
