Minor word of warning, the second episode has a gross scene, not by todays shows standards, but it was for 2008 when it aired. Most of the rest of the show isn't like that though.

Start with Season 1, Episode 1 — watch straight through to Season 5. After that, if you're hooked, check out El Camino (movie) and then Better Call Saul for the prequel goodness. I think that's it.
