Been focused on my VN catch up, but interest collection is about 45 minutes or so away, so thought I'd say "howdy" as I pass through and do a little catch up.

you ah.... might have to share that recipe!!!

So, I don't have a specific recipe really, but in general:
1 lb Ground Pork,
2 cloves garlic, minced
1-2 tbsp sesame oil,
2 tbsp soy sauce,
1 egg
1/2 tbsp ginger powder, ginseng, or allspice (I use the latter couple when cooking enough for partner, they are ironically made nauseous by ginger)
sliced green onion stalks as desired
as much nappa cabbage or bok choy as wanted, shredded.
Mixed it all and fill dumpling wrappers with it.

As for the dumpling wrappers, if you can't get premade ones, won ton wrappers work just fine, but I prefer making my own over using those. Simply a 2 cups flour, 1.5 cups tepid water, and a pinch of salt, mix until clumpy, bring the dough together, cover with plastic wrap for around half an hour, then knead until about as soft as your earlobe. Slice it into small portions, and roll it into as thin and circular as possible without tearing it, dust with flour so it doesn't stick as you stack it.

When everything is ready, fill the wrappers with a spoonful of the pork filling and seal it. Then, cook it how you feel: Oiled frying pan like pot stickers, boiled, or how I do it, bamboo steam baskets for about 10 minutes.

I also make a dipping sauce that is mirin, soy sauce, a bit of sugar, and sriracha.
