I'll be doin' a bit of the old in-and-the-out here, but mostly focused on the ladies of the University of Problems (it's the update I have! :LOL:) a bottle of beaujolais left over from a party a few weeks ago, and a bag of chocolates.

Dinner was excellent -- I had some of the shrimp, chicken and sausage gumbo I made a couple months ago. I usually make a big batch then freeze most of it in meal size portions. It gets better with age. I love making gumbo but it takes time, especially the roux, which is why I make a lot. I poured it over rice and had a few pieces of cornbread to go with it. AND a light crisp pale ale. While I was eating I watched the season finale of Dexter: Original Sin. A great meal mixed with Dexter's fun loving shenanigans -- what could be better?

especially the roux
How much roux do you make at a time? I usually do gumbo in a 4qt Dutch oven, so I only need a 1/4-1/4 batch of roux. I use oil roux for gumbo, but butter roux for gravies. To get a chestnut, my normal speed is about 30 minutes, but I found I can do it in about 12 minutes on higher heat - just have to watch it more closely. Don't want it burnt. Found out I can do it quick one day when I'd already got the rest of the gumbo on to simmer and realized I didn't have the roux done yet - usually do it the night before. Got it perfect, but was a little nervous about burning it - easy to do if you use high heat and don't pay attention.

Good night to the spreaders of Sleaze and bringers of naughty comix and pix.

Now that the dreaded V-day is over i can drive off into the night, with my preferred soundtrack of course, this one is one of my favs and in many mixes i have for driving (synthwave is great for driving long)
