ps- I work in the produce industry and I was taught, about day 1, we do not say the R-word. "advanced maturity" is what we say in produce. hehe

edit: and when its REALLY past its point, we say, "pissing out the boxes." To imply its so ripe and juicy the fruit is leaking. This is a very bad thing at the distribution level.

Another saying, "sell it or smell it!" If you can smell produce (at the distribution level) you are nearly out of time to get this into a chain or store and give them time to also resell it to the end consumer. going to a majro produce market and smelling guava or jack fruit... you just know someone is losing thier ass on that maturing product.

I put cheese on a lot of my foods, despite being a little bit lactose intolerant. Tastes good enough for the offset later on.

Cheese combined with other foods is top notch, especially Pizza. Too bad I can't consume too much of it cuz lactose intolerant.
