I really like cheese, particularly Spanish, then the rest of the Mediterranean, circle outwards from there… but stop before you hit North America and it’s aerosol and processed cheeses…. Oh and fermented cheese… I love a strong blue like a Cabrales… but fermented is that step too far… happy with moldy, but can’t do rotten!
