Little town like that needs a single hole-in-the-wall Chinese restaurant complete with a family that came over either from Korea in the 50s or Vietnam, Laos or Cambodia in the late 60s/early 70s. I know you already have Japanese characters, so maybe it can be a teppanyaki, but I did a lot of work in small towns in East Texas as well as in Missouri, Tennessee and Arkansas. Every town, no matter how small, always had one of these "Chinese" restaurants that had better food than you'd get at any place in a large city. Occasionally the owners would be actual ethnic Chinese of some description, but it was almost always otherwise, and they would put stuff from their culture on the menu, but "Chinese" always works better in these little redneck towns.
