To be fair I've watched the anime then read the LN. For all there is to the story I can't fault the anime in skipping stuff but the LN makes things so much more understandable.
For example here is an early spoiler
The reason Hajime becomes so twisted in his head is because he was trapped for a week hungry and thirsty, he did not die because of the ambrosia that was there but that only healed his body. It did not fill him nor quench his thirst. In that time he only had questioning why he was there and that lead to him understanding he was betrayed and further no one prevented it nor came to save him. All that while his body was eating itself alive and being repaired regularly gave him a skewed perspective and eventually leading him to eating monster meat to sate his hunger despite learning in the library previously it was poison to humans. Then came the part where the meat was literally killing him while the ambrosia was fixing him and if memory served was described as dying a thousand times.
This is why he is so angsty throughout the story but is also part of the story. It is a power fantasy with a harem that Hajime is aware of despite declaring he only loves Yue even though she is pushing for him to love them as well. It's no master piece but it does offer more layers than one might expect.
