And hello to the tosser as well! Not all day - I have a chili friendly tomorrow afternoon and don't want to do what one of our guys did last year: he cooked the night before and thought it would warm in time in the crock pot the next day. Was still cold when tasting began.
Mine will cook about four hours and go from Dutch oven to sealed crock pot for the drive to the site. And while it should smell nice, especially after I drop in the fresh ground cumin near the end, I almost needed a respirator when I was making the chili paste.
Last couple of years the entries were all on the tame side - even mine - so I think we need at least one this year that you'll notice. The trick is balancing flavor and heat - pure heat for the sake of heat is a waste and a sign of a bad cook. It should taste great when you take a bite, hit you with heat, and then recede a little. Of course, you'll probably notice some of the heat again a few hours later.![]()

Anyway I'm off. I've been out of bed for several hours now and I'm exhausted from doing nothing somehow. Covid is fun.
