I feel much the same, except I've never tried either lattes or cappuccino. Instead, I brew my own. A lot more acids get released when brewed at higher coffee maker & Keurig boiling temps, because people want fast-fast-fast. The water hits the grinds for a short period, so they need a higher temp, and that temp range is what pulls the most acids out. I brew mine at 195% and steep it for about 5 minutes. It gets a nice rich flavor with a higher PH. I also have to use less sugar to make it taste just right. I haven't tried grinding my own beans yet, but I'm still learning the art, so that may be something coming soon. Coffee tastes a lot different when done with something like a French press at a lower temp. Don't know what they do with a latte or cappuccino. I'll have to look at that.
