I've never tried to go full-black roux - I like it dark, but not quite that far. I don't post my own photos here, but color matched a picture of my last batch to this example - same lighting, so it looks a little lighter than when the flash isn't engaged.

I try to go a bit darker than that - but that is close AND happy to see you using a wooden spoon as one should.

That wasn't mine - just one that looked close to the pic of my last batch, but it had way too much light on it, so it was too reflective. Found a pic of a batch prior, without all the direct light and reflection, and it looks more the color of chocolate pudding - it's just when the sheen is on it, you get that brightness that reflects closer to that chesnut coloration. Tricky to take a pic of when you don't have studio lighting or natural light. We seem to go close to the same shade.

And I tend to whisk instead of spoon - I use wooden utensils otherwise (olive wood - lasts longer if you keep it oiled). But for roux, the whisk keeps things moving better and the fat and flour combine better than when I use a spoon since something as thick as a spoon tends to push things around more than it combines them - just my method.

You can buy it in the order you want.
But I would get P1 first. SO you get rid of the like timer and then straight to P4.

You can buy the highest without going through the lower ranks....some even got the mem+ for free since they were yappers before the new system
