leather boot soup...flavorfulTends to be too thick and I don't think it's as fatty as pig (pork rinds), and is much better for leather. That said, there have been many instances of people boiling leather shoes/boots (usually bovine leather) to make soup or to even eat when in times of rationing/during war and other times when food is scarce. I've also never heard of sheep, goat or horse rinds.
As for which is better, I use and eat more pork (very versatile), but nothing beats an aged ribeye cooked by me, and bresaola might be the best charcuterie - though I like all of the pig versions as well.
. I see, sounds like like a pain to prepare but not impossible to make something delicious out of 
. Also explains why it's not really a common thing. Beef rinds sound like something I could possibly try to make.And I agree on the versatility of pork. I like beef, but it doesn't have that extra bit of crispiness/crunch that the addition of skin provides to other meats. Pork is probably the most versatile when it comes to texture imo.
