From this I would say that "Alice" is safe by design, but to get to "Bob" you must gain access to last node.
And if "Bob" somehow figures out that he can host his own node, which he sets up to be exclusively used as first link, worst case scenario he would get a request from some agency to get access to logs on his node. If the node is set up in logless mode there is not much that can be done.

The entry and exit points are no secret. Therefore, only the exit points need to be monitored (via ISP) and you know where the traffic is going. If I remember correctly, various exit points are even operated by goverment organizations.

I have a friend that plays a lot of GTA online, so much he just leaves it on sometimes. I like to go pick up a hooker, park him in the middle of a street, and just let people interact.

Exit point on the side of "Alice" is encrypted, therefore nearly useless. You can't expose content or origin.
Exit point on the side of "Bob" (one last node) is unencrypted for one hop till Bob. But I already mentioned that Bob can host his own, and no other node in between Alice and Bob will be able to expose traffic content.
