I like the game, but does anyone else think that you have to wait for several updates to tick by before going in for another playthrough? Like I'd feel like I'd run out of new content too quickly if I tried to play every time it updated.

It's a very sensible idea. Updates are often released, they are quite large, so if you skip three or four updates, then a lot of new material will appear. Personally, I play according to the two missed updates scheme - I go through the third one from scratch, because the gameplay is very good, going through from scratch is by no means boring.
