Four Elements Trainer is pretty good, although after about the 2nd chapterit goes off of parody and is more like a new story in the Avatar setting.
In terms of actual parodies, I'd still have to go with the old Akabur VNs that started the whole renpy porn game craze, Witch Trainer and Princess Trainer.
