Are there any adult games/VNs that use AI generated images? And if so, do any of them do it well?
I'm curious to see how they stack up vs. more traditional approaches like DAZ...
I'm also curious how the AI art is being used - to generate 3d models? Still pictures only? AI backgrounds and DAZ models? AI tools for creating videos?

It varies pretty widely. A lot of what I've seen in various games is 2D art, stuff like models or whole stills. There are some AI tools that people have used to scale up the realism of pictures such as ones made in DAZ so they look almost photorealistic. The main problem often comes down to consistency. It can do some really good work with one offs, but it tends to have trouble with consistency between pieces of art as well as avoiding the uncanny valley effect such as accidentally putting three fingers on a hand or in one game I play, there's a window for a background room that has a view of the outside, but it also shows a room on the other side that would conflict.

I have heard it was super grindy with almost no actual... sex.

Its not that grindy but, lacking contents, so many Daddy daughter games but yeah you know what i mean, abandoned tag or slow update

None is better than "Daughter for Dessert"by Palmer(R.I.P) but be warned it is an extremely heavy story and romance based game,i think theres over 24hours of game time

That was my first real AVN that I played. Previously I'd only dabbled in flash sex-games which had super surface-level stories and were over in like 10 mins. DfD made me realize that AVNs could be works of art.

for me, its dating my daughther, even tho, i dont really like that daugther. but its slow paced, but still fast enough, that you have the feeling, that you get "there". at halfway through, the quality drops unfortunaly imo. but still one of the best overall.

I generally prefer VNs to sandboxes but it depends on the story and how the sandbox is executed. In Love Of Magic, it works because the story has RPG elements like battles, so you actually have a reason to think about your character build and choose accordingly. FlirtyF is more of a traditional incest harem type story but it does just enough sandboxing that you can approach the girls according to your mood at the moment.
Overall, I would say sandbox environments work when there's a lot of love interests to choose from IF you avoid grind and make sure the player can't miss any time-boxed requirements.
So would this approach work with DK content? Yeah, I think it could, but instead of telling a single story it would be more about here's the eight or so romanceable characters and you basically just play all their storylines in parallel. Yes, it would be more work, but if DK wanted to set up a harem game like The Headmaster or Mythic Manor, it would probably be a better fit than VN.

Parental love was a good one one of my first avn's if I remember correctly

Parental Love wasn't my first AVN, but I think it's what really got me into the daddy daughter genre. Definitely a favorite
