Most games have characters with eyes that look dead, so when they look good and emotive, it does make a difference.

It matters for sure. It starts to matter less the more models have rare/appealing colors.

For me, eye color doesn’t matter. But the phrase “Beauty is in the EYE of the beholder” fits here... No pun intended

Honestly I tend not to notice that much, even in the anime-style games where the eyes are much more prominent. There's probably an unconscious effect of light colored eyes vs dark colored eyes and so forth but nothing I really pay attention to consciously.

Just kinda curious as it's something I often ignore myself...

But when I look back at some of my favorite renders, it turns out I do have a preference! It sometimes does make a difference!

Not particlarly. In a game you usually can't tell, and IRL you have to be relatively close to be able to.

Usually I don't pay attention to eye colours, but there have been some cases where creator makes really beautiful images showing close-ups. And then I remember case where character was spoiled by giving her red eyes, I can't remember what Koikatsu game it was though. My favourite colours are deep blue and green. Some amber/golden might look pretty on some alien races.
