Okay, genuine question, what makes a good taco? I've tried several tacos in my life and they were all.... not DISSAPOINTING per se, but they were never good enough to make me think "yeah, if I had the chance, I'd go for a taco again"

NOT hamburger - sliced beef. And flour soft tortillas. Spicier than "white people tacos." And no salad ingredients.

I have had great tacos but I or my family were the ones that made them. The only tacos I ate that were amazing that I bought was from this small restaurant that looked like a house with a small sign in the middle of the industrial sector of my hometown. The lady had her son and grandchild as workers but she had trays (20+ tacos) ready from scratch in like 15 minutes. 2 small tables with 6 chairs but none matched the other.

If the person you're buying from speaks broken English or has a child to translate the order, you're in the right place, usually. But I live in California so it's easy to find good tacos.
