All the "All-You-Can-Eat" restaurants I've been to have a pretty hefty upfront price. Like there's all you can eat steak for $50-60, or Korean BBQ for $70. Since it's all meat most people can't actually eat enough to eat more than the wholesale cost of the food. Or alternatively it's something like Sizzler where the buffet food is all cheap food.

The one I said is the closest to my location was 17$(obviously not in $, and drinks were 2$ each which you had to order at least 1, but ended up taking a few at least) the last time I went a few years ago and had quite the selection of dishes, some made on the spot, from seafood to lamb passing through duck and everything in between.
It even had sushi and other weird shit. The ice-creams and other desserts were packaged though for some reason.
It was very good and has other sites farther away(I guess it's some sort of franchise) that had similar food. One of them was more Asian oriented(and a bit more expensive, 20$ maybe), but let you order Japanese soups on demand and did sushi on the spot in front of you, but did not have the variety of foods the others did.

Yeah there has been plenty of buffet type restaurants that pop up in my area and yeah not a lot of them last long. There is this one tho that's been around for 5-6 years. They have all sorts of random stuff to. Even someone who makes all sorts of sushi

I checked online, out of curiosity, how they are doing. 7 locations at 20$ the all you can eat buffet(I think they had 3-4 before), except for the Asian one that's 30$.
Doing pretty good and still affordable, but people complain on reviews that there are not enough waiters in the all you can eat buffet to do their biding and they have to move their ass if they want something

the only buffet style restaurants I go to these days are ones that do a Mongolian grill thing or a hibachi. No wondering how long the food's been sitting out, it's all cooked up right in front of you. Prices I've seen vary between $17-$30s for the places I go to.
