Never made Yorkshire "puddings" but they seem to be something like a cross between a biscuit (what I think y'all call a scone) and a dinner roll of some sort, but the first option sounds good - I like low and slow and pot roast (as we frequently call it over here) is always a favorite. Always want some kind of bread to sop the gravy.
I live in the land of BBQ, and, unless you're planning to smoke it over low heat for a couple of hours, we just call that "grilling".
Lasagna is a pain to make, so I usually do a different style of baked pasta - rigatoni or ziti are my preferred. I make my own Italian sausage and then just figure out what kind of sauce I want. Usually has copious mushrooms, spinach ad cheese. Probably be doing this in the next week or so.
All things considered, its been longest since I did a nice roast, so that one sounds best of the options you're putting up.
