Why doesn't Dumb Koala just merge a lot of their games into a "normal" Ren'Py game with choices and multiple story branches. These linear short games are kinda a waste to me.

The limited scope and length probably makes the writing much easier from start to an actual finish.
Yes sometimes it feels some story is left on the table, but they never feel actually unfinished, like so many other games, that are abandoned for the next project.
