It's good - its grand strategy like the other paradox games. The space flavor/features are cool and you shouldn't be bored even if you played CK3 or EU or Hearts of Iron to death.

Yeah, i actually enjoy some games like that, but most of them are turn based strategy, however i prefer it if it has rts gameplay, so stellaris seemed pretty much what i was looking for
However it has looots of mechanics i don't understand but the basics so it got overwhelming for me the amount of content it has

Well it started like that cause it seemed fun that way, but got really complex later and My mind exploded not knowing how to go on lol

Well you can learn by playing a small galaxy with very low AI count and just try to learn expanding by colonizing planets and resource management.
Also you can throw some systems to AI tell them how to build it and they will build it, not the most optimized way but it is better than micro every little system you have.
