As an American, I try not to consume much corn, because they shove that shit into everything here so we all get more than is healthy if we're not careful, and usually in an unhealthy processed form. I can't say I have a favorite vegetable besides potatoes but I am quite partial to bell peppers and onions.

Can't really say I watch my health in regards of food. It's not my fault I love eating and the best foods usually are also the unhealthiest.
I don't eat bell peppers that much, onions I like, but I don't know that many different dishes with it (caramelized onions are top notch, though).
Potato is #1, obviously, but corn you can have corn on the cob, creamed corn, corn ice cream, corn juice, even popcorn if you wanna get technical. Hahaha
Here there are two typical sweets that are also made if corn: Pamonha and Curau. I'm not a huge fan of the latter, but both are good and worth trying if you have the chance.

It's kinda like that in Hawaii. White people are "haoles" (or the US equivalent of "honkies"), but after you've lived there for a few years and become a Kama'aina then the people become a lot nicer. Not sure how they can tell, but they just start treating you better. Also, it seems like IF you know just one Samoan really well- they have a weird telepathy that makes the rest of them like you too.
