Can any of these do celebs?

Usually the open source ones CAN do celebs, at least the most famous ones which will have images used during the model training process, or using specific model addons (called LORAs) which can created for a particular theme, and a few were created to generate likeness of particular celebs. However, this is not exactly the process of achieving integral likeness, unless you are using a specific LORA created for that particular celeb, since besides general likeness you may end up with additional details that were present in the original source scenes. But then, most of the times you really don't want to get the exact likeness (I like to combine traits from different faces to get "new" faces, not reproduce known faces).

Do you use map to re-do fingers as a separate step? Or is there better way?

If your using stable diffusion look at LORA's and embeddings they can help with hands.

If your using stable diffusion look at embeddings these can help creating images with a likeness to a person. Otherwise some of the online AI image creators let you create celeb likeness (Not sure which ones maybe some other members can help?) but finding one that also allows NSFW will be hard.
