Was the option to change Petal's age removed in the remaster? I think it was possible in the original.

He removed it when Steam declared that APAT was permanently and without the possibility of appeal banned from their platform for underage content, just because that option existed. I think AMoB is on there, because he changed Petal's canon age to 18 and made it unchangeable, and Bliss is a couple of years older (19-21, I forget since I haven't played it since like the first update, for exactly that reason - Lockheart really leaned into every possible signifier of Petal's 18-ness: her job, college, etc.). Moon is even older than Bliss and there is a time skip so she will be pushing 30 by the time our MC gets into her pants.

I believe Lockheart is also planning to compile and release the Rose Garden Trilogy as a single game as sort of a backdoor (not that kind of backdoor) way to get APAT on there.

He apparently had some corruption of his DAZ Studio or something that made all of his characters have some sort of distortion in their facial morphs which led to a unique look which people assumed for ages was an intentional "Lockheart" spin to the typical DAZ characters. It wasn't. He figured out how to fix it (with help) and now his characters look normal. For better or for worse. Some folks liked the "style". I didn't mind it myself, but they still look good now.
