Actually now that I think about it, you're right that most sushi sucks. I was thinking only of quality sushi that I really enjoy. But your examples of foods without sauces...I would argue that most Italian, Indian and Mexican foods are either in a sauce or are usually accompanied by a sauce. Every time I've had sushi. It has been bland. I've had the cheap petrol station stuff and the expensive shit. It's all the same. Maybe my taste buds are too particular. I did grow up tasting all different kinds of spices and recipes lol.
AND there are plenty of foods that you can eat without sauce to accompany it. Some examples... Pretty much all Italian, Indian, Mexican food etc can be eaten without sauce and still be nice.
