Never said I didn't like chorizo - I do - but it isn't Italian, and the "pepperoni" prevalent in the US isn't really Italian or of very good quality. And, not a sausage racist (bigot would be a better word choice for your hyperbolic accusation, honestly ) I just happen to be very experienced in the world of charcuterie - I like most of it, but also know what goes better with what based on years of experience, and what is quality versus crap, and chain pizza restaurant pepperoni is crap.

Pepperoni isn't Italian at all to begin with. Pepperoni is American to begin with so apparently not too versed in the world of charcuterie to know that pepperoni was created by Italian immigrants in the US and was based on Italian soppressata which is also why "authentic" pepperoni is a mixture of beef and pork because of the prevalence of the beef industry in the US whereas authentic soppressata is simply pork. Chain restaurant anything isn't going to be high quality so pointing out that chain restaurant pepperoni is garbage isn't high quality would be like pointing out that Taco Bell serves meat rated just higher than what they serve in dog food or "cutter" grade beef which is below the meat sold in chain supermarkets which would be standard or commercial grade. Premium > Choice > Select > Standard > Commercial > Utility > Cutter (Taco Bell) > Canner (lowest approved grade for dog food)

Something like Battistoni would be authentic pepperoni. They're not only based in New York they (though headquartered in Buffalo instead of Manhatten) and they were founded by Italian immigrants. Their pepperoni also beef and pork which is more accurate than the pure pork "premium" pepperoni that is often sold as "authentic" Italian. Italians claim everything as theirs even though tomatoes didn't arrive in Italy until the mid 1500s and were originally thought to be poison, but in-fact it was the plates they used and the acid in the tomatoes interacting that made people sick. Speghetti and meatballs also isn't Italian by and by despite being sold in pretty much any "Italian" restaurant as such.
