Tags are just a preference and are not the hallmark for ruining a game. The game itself is make or break in this case. A game can have every tag you love but if the game is poorly made you will remember it just so that you can skip it when you see it. The ones I found that usually have the most dislikes are 3 things. Slow redundant updates, Crazy grinding, and bad writing.

Is there any that immediately make you go "hell no"?

For me it's turn based combat and the obvious censored tags

RPGM, They're basically unplayable for me. I hate that format.

Purely the save system that makes it a no from me. Either they have access during sex scenes, or they add a gallery with all the scenes unlocked. Menu access is fine, but I've only seen it once, whereas a gallery with everything unlocked means going through all of them to find the one you're looking for, especially because they are JUST NAMES! You can't tell if blowjob 1 or blowjob 12 is the one you're looking for without actually checking them all.

The sandbox grind of some otherwise good games. It's insane to have to do the same activities & watch the same scene hundreds of times to progress in the storyline.

crap writing, game breaking bugs, crap animations when just some pics would be better. Gameplay just add to lengthen the game not enhance it. game being overly long/ dragging out without anything of note being said or happening. There is alot that can turn me off especially the more well written, good gameplay or hybrid porn games get released.
I have also noticed that as i become a more experienced gamer overall i become more picky which again is not hard to imagine when one take a look at the daily flood which is mainly sewage on steams daily releases
