I don't necessarily mean your favorite movie, but what is something that people should watch at least once in their life? Could be because it is of great significance to the film industry, was the first of a specific subgenre that has now become a trope, or whatever other reason.

I'll start with Citizen Kane. It used cinematography that brought deep focus into mainstream films, and was an unabashed dive into American capitalism that hadn't been done as well previously (though I might have forgotten something earlier than this lol.)

What do you all suggest?

Star Wars but it has to be the original 1977 film. Not any of Lucas bs 4 different special editions. Better off having no baggage either, no knowledge or history of the franchise, just enjoy it as a fun popcorn flick. Though since the movie is nearly 50 years old maybe it can't be appreciated like the newest film with cgi effects and all the bells and whistles people expect.

Interstellar still one of the best realistic space movies with actual science.

2001 is incredible but not for everyone, its like a transcendental experience. Kubrick is a master.
