This year I want to replace my old 6650xt for a new GPU and was thinking about getting the new 5070, but I also want to mess with Blender and Daz and wanted to know if 12GB was good enough to use the program without problems, or would be better to get and older card with more RAM like the 4080 super.

Get at least 16GB. 12GB is too low in 2025. With 16GB there will be both 5070 Ti and 5060 Ti. 4080 16GB or 4070 Ti Super is an alternative, but the price of a 5070 ti should be similar while the performance is expected to be better. 5060 will be sold later in 2025, no specifications have been published.
