There's just not enough completed games, let alone good ones that are up my alley. So it's basically ongoing or nothing. Of course if I could choose I would like them all to be completed.

If we're talking about western vns, I have yet to stumble upon one that doesn't makes me cringe. Japanese vns on the other hand I like it. Idk if it's the quality, the fact that I don't understand 99% of it, or just that I've been playing them since the very beginning.
I like choices but I don't like mutually exclusive content. So for me the best kind of system is "choose your own flavor" kind of choices. Where the events are mostly the same, and the choices just let me choose the way they play out, the vibe, the personality of the mc, optional kinks, and so on.
First and foremost, do the type of content that you like and know of. Don't take a dip at fetishes that you don't understand or enjoy.

Depends on the quality of the sounds. I usually leave it as long as it isn't over the top or awfully bad. Same with music, which btw I'll never understand why would anyone put music with lyrics. Totally takes me out of the game.

I really liked Heroes back in the day. It was cancelled and I can't remember if there ever was a 3rd season or not. Not sure if it would hold up today, but just out of curiosity I would totally watch it again if they were to make a continuation.
