A suggestion, when making the caramelised onions you can mix in the amount of hot sauce that you want, as the onions caramelise they release liquid and will thin down the hot sauce and continued cooking will thicken it again but spread out over the onions.Onions and hot sauce, but I haven't nailed down a specific kind yet. I like habanero hot sauce but it's a lil too spicy to spread evenly over the whole sausage.
Caramelized onions are ideal, but sometimes I'm in the mood for raw onions too

If your talking about raw onion in a small bowl you can mix in the sauce with the onion and toss it around for a bit to coat the onion allowing for a finer amount of distribution over the whole hot dog.
